Learning to taste a fault
A proper tasting is done from a blue glass so colour cannot fool you, warmed in the palm, sniffed, then slurped across the tongue with air. You are taught to find bitterness and a pepper catch at the back of the throat, which are virtues, and then the musty, greasy notes of oil that has been left in the fruit too long, which are not.

The press only runs for about ten weeks a year.
Olives are picked and milled from roughly October to January in the northern Mediterranean, and that is the only window in which a mill visit includes a mill actually working. Book inside it and you watch the whole line run. Book outside it and the machinery stands still, so the day becomes the grove, the museum and the tasting bench instead, which is why the tasting-led tours are the safe choice from spring onwards. Almost all of this happens on farmland, so most tours either start with a drive out of town or hand you a bike.
